I’ve got a super special recipe to share with everyone today! These simple chocolate chip cookies with brown butter are delicious and so easy.
I’ve been working with Lucas on his kitchen skills lately and he’s really started to show an interest in it. Cooking with the kids has always been one of my favorite ways to spend time with them, it gets us away from the electronics and encourages them to chat with me while we bake. Lucas has really enjoyed cooking lately and helps every step of the way. He even helps choose meals for our meal plan and fills out the grocery list with me. It’s a great way to practice his math and measurement skills, too. He’s become so much more confident in the kitchen since we started cooking together, and I love the time with him.
Homeschooling has given us the flexibility we have always dreamed of, and we can use things like baking, cleaning, and gardening as part of our curriculum. The kids learn skills that they will use forever and have time to work on other goals as well. Plus we are done in a few hours each day. There is no wasted time, and we have total control over what they are learning. We have always checked in with them to see how they feel about staying home or going back to school and I’ll be sad if they decide to go back, but they deserve a say in what we do, and we’ll always respect that.
Back to cooking
We started slow with things like brownies and cookies and quickly added things like learning to safely boil water and chop veggies for dinner. I think he could take over meals pretty soon! He loves helping knead pasta dough and running in through the press, but his favorite thing is probably getting to taste-test everything with me. I’m grateful for how good he’s been feeling after treatment.
This week we have been testing out a simple chocolate chip cookie recipe that is so delicious. No weird ingredients or confusing steps, but perfectly chewy cookies every time. The recipe includes browning some butter, but it is super simple. It gives the dough an incredible color, not to mention it tastes like caramel. So delicious. You can skip this step and use room-temperature butter, but they won’t have a caramel taste and who doesn’t want that?
The Recipe
Simple Chocolate Chip Cookies with Brown Butter
Ingredients:
2 ½ cups Flour
1 teaspoon baking soda
½ teaspoon salt
1 cup butter
1 ¾ cups dark brown sugar
2 room temperature eggs
1 tablespoon vanilla
1 ½ cup chocolate chips
Step 1. Add the butter to a large saucepan and place on medium heat. The butter will melt and crackle. Watch closely because it will foam. Stir constantly to help avoid the butter from foaming over the sides of the pan. It’ll turn a nice light brown color. Remove from the heat and allow to cool for at least 10 minutes. It should be cool enough to touch before using it.
Step 2. Add the cooled butter and sugar to a mixer. Mix until well combined- at least a minute. Then add the eggs and vanilla. Stir to combine.
Step 3. Mix together the flour, baking soda, and salt together and slowly add to the mixer. Just until it’s combined. Add the chocolate chips to the mixture at a lower speed.
Step 4. Chill the dough. This helps the dough come together. Don’t skip this step! Let the dough chill for at least an hour. It helps if your form the dough into balls before chilling, but it’s not absolutely necessary.
Step 5. Once the dough has chilled, preheat your oven to 350 degrees F. Form the dough into about 2 tablespoons each and place on a well-sprayed cooking sheet. I like to line mine with parchment paper, too.
Step 6. Bake for about 7-8 minutes. The edges of the cookies will be a golden color while the middle may look a little underdone. Don’t overbake the cookies! They will cool for 5 minutes before removing them from the baking sheet.
Step 7. Once the cookies have cooled for 5 minutes, move them to a wire rack to cool completely. This recipe should make about 3 dozen cookies.
